Cooking Tips by Sinomedica - Spicy Calamari

Ingredients


  • Fresh squid (not frozen!)
  • One teaspoon of cumin seeds
  • One teaspoon of coriander seeds
  • One teaspoon of fennel seeds
  • 5 grains of black pepper
  • The seeds of 2 cardamoms (or one teaspoon cardamom powder)
  • One 3-cm piece of peeled and finely chopped ginger
  • One small clove of garlic
  • Two tablespoons of neutral oil
  • Salt
  • Fresh coriander

Proceedings

Wash and cut the squid. Dry well with kitchen paper.

Put the seeds in a pan and let them brown a few minutes then grind them with a blender. Do not wash the pan.

Add the ginger, crushed garlic and oil and blend until creamy.

Pour this marinade over the squid, mix well and let it sit at least 30 minutes.

Before serving, heat the same skillet that served you before, and when it is hot, cook the squid in it over high heat for about a minute.

Immediately place the squid on a plate, garnish with cilantro and serve.
