  • One wild sea bream
  • Olive oil
  • Hot salt
  • Pepper
  • 2 handfuls of coarse salt

Preparation 5 minutes, cooking between 25 and 45 minutes depending on the weight of the fish.

To cook sea bream in salt, ask the fishmonger not to remove the scales. Sprinkle two handfuls of salt over the top and bottom of the fish. If you prefer that the fishmonger remove the scales, do not put salt but grease the sea bream with a little oil.

In the belly of the fish, you can put herbs and a few lemon wedges. Bake in a preheated oven at 180 degrees. Cooking time depends on the weight of the fish and the oven used. Ask the fishmonger for advice. It is always preferable to cook fish in an oven at a medium temperature, never high. Generally, the fish is ready when you observe water coming out of its mouth. If sea bream fillets are used instead of the whole fish, cook them in a pan with a drizzle of olive oil 5-7 minutes per side.

After the fish is cooked and placed on a plate, season with a drizzle of olive oil, add chili salt crystals or a spicy salt, or even fior di sale crystals and Espelette chili.

Remember to check the package of the flavored salt for hidden traces of sugar!
