  • Eggplant
  • Olive oil
  • Garlic
  • Salt
  • Pepper
  • Fresh coriander

Proceedings

Heat the oven to 200 and put the washed and dried eggplants in for an hour or so.

Let cool and remove the pulp. Put it in a mixeur with some crushed garlic, olive oil and salt until you get a nice cream. Decorate with fresh cilantro (or other) and ground pepper.
