Green beans and fresh oregano

Ingredients


  • Fine green beans
  • One clove of garlic
  • A bunch of fresh oregano
  • Olive oil
  • Fior di sale
  • Pepper

Proceedings

Preparation 5 minutes, cooking 5 minutes.

Cook fine green beans in salted water along with a whole clove of garlic for 2-3 minutes. Personally, I like them crispy.

Once they have reached the desired consistency, plunge them into a bowl containing ice water or otherwise very cold so as to stop the cooking and retain their color.

When ready to serve, heat them for a moment in a frying pan with a drizzle of olive oil, season with salt, add a generous sprinkling of fresh oregano and pepper.
